Anhydrous Milk Fat is made of pure milk fat, it should comprise a minimum of 99.8 percent milk fat and should be made from butter or fresh cream to be included in the category of Anhydrous Milk Fat (AMF). It is excluded from milk or its derivatives by using processes that enable the complete removal of water along with non-fat solids (milk protein, lactose, and minerals).

Anhydrous milk fats should not contain any additives during the production process, which is essential for the neutralisation of free fatty acids. It has many characteristics like having a creamy, rich flavour, it can be stored for around 24 months, comes in a variety of packaging, and can be transported without the need for refrigeration.
